Top five cocktails to try this summer

Mix it up this summer with bar manager Alex's top cocktails for sipping in the sunshine.

Classic Strawberry Daiquiri

The strawberry is a classic summer fruit and is the perfect ingredient to give your daiquiri a fruit twist. In a blender, add 100ml of golden rum, six fresh strawberries, 40ml lime juice, a dash of sugar syrup and 25ml of strawberry liqueur. Add ten ice cubes and blend for twenty seconds. Fill a jug up and pour this berry delightful drink for two, best served in the garden with a side of sunshine!

Gin Garden

This elegant tipple blends the fragrant flavour of elderflower with the tartness of the apple to create a wonderfully refreshing cocktail. Choose your favourite gin and pour a large measure into a hurricane cocktail glass. Add elderflower cordial to taste along with apple juice and a squeeze of fresh lime. Shake and add slices of cucumber to garnish. This cocktail is a great variation from the classic G&T and perfect for gin lovers.

Cornish Negroni

For a Cornish take on a much-loved cocktail, we like to use Cornish Rock Gin – a smooth, dry gin handmade in north Cornwall. To embrace the taste of Cornwall in your negroni, add a large measure of gin, 25ml of Knightor rose vermouth and campari to a lowball glass. Add a squeeze of fresh orange and a little grenadine to sweeten to taste. This bright orange beverage was made to sip outside on a sun lounger or around the barbeque.

Flavoured gin and tonic

Nothing shouts summer more than an ice cold G&T in the garden. Flavoured gin really has stolen the hearts of the nation and we’re not surprised! Instead of buying a bottle of your favourite flavour, why not infuse your own? A little like a pornstar martini but fruitier, shake a large measure of gin, a dash of lime, a dribble of vanilla syrup and add passion fruit puree. Pour it all into a big gin copa glass and top with tonic. Not a fan of passionfruit? Try a raspberry and cranberry gin by adding raspberry puree and cranberry juice.

(Alex’s top tip – buy dessert fruit coulis from a supermarket and use this in your creation, it tastes amazing!)

Summer in the Courtyard

Sweet meets sour in this bright and beautiful Alverton special. To recreate our ‘Summer in the Courtyard’ cocktail, add a large measure of Pinkster gin with a half shot of apple liqueur, pear vodka and chase elderflower liqueur. Shake with half a shot of lime juice, 50ml of cranberry juice and slices of cucumber. Strain into a sling glass and top with sparkling water.
