Ollie’s Christmas Turkey Recipe

Why not switch things up a little this year and have a go at Head Chef Ollie's Christmas turkey recipe?

Ingredients

2.5kg Etherington’s rolled turkey breast

75g butter, softened

50g bacon jam (to make)

30g Etherington’s sausage meat

7 sage leaves, finely chopped

2 clementines (4 slices)

Neutral oil

White pepper and Cornish sea salt to taste

Bacon jam

250g smoked pancetta lardons

3 onions, finely diced

200ml cider vinegar

200g soft brown sugar

200ml strong coffee

To make the bacon jam

Render down the fat from the pancetta lardons, then lift them out with a spoon and set aside.

Add the onions to the pancetta fat and cook until soft but not coloured.

Return the pancetta to the pan, then add the vinegar, sugar, and coffee.

Reduce over a low to medium heat for 10 to 15 minutes, or until the mixture thickens to a jam-like consistency.

For the turkey

Preheat the oven to 180°C, and line a tray with foil and parchment.

In a bowl, mix together the bacon jam, sausage meat, butter, sage, and a couple of twists of white pepper.

Place the turkey in front of you and gently slide your hand under the skin, fingertips facing upwards. Loosen the skin carefully, taking your time so it doesn’t tear.

Spoon the bacon jam butter mixture under the skin and spread it out evenly. Smooth the skin back down, then lay the clementine slices over the skin.

Transfer the turkey to your tray, drizzle a little oil over the top, and rub it in lightly. Season with pepper and just a small pinch of salt (the bacon jam underneath brings plenty of seasoning). Add 30ml of water to the tray.

Cooking time

Place the turkey in the oven and roast for 1.5 to 2 hours, or until the juices run clear.

Once cooked, let the turkey rest – it will carve far more cleanly, and it gives you time for a pre-lunch refreshment!

Be sure to use the resting juices to add depth and richness to your gravy.

Chef’s tip: Use a sharp knife for carving – my knife of choice for Christmas is from Pareusi at St Agnes.
